BEEF BARLEY SOUP RECIPE
Here's a basic hearty Beef Barley Soup recipe:
INGREDIENTS:
2 cups diced beef
2 cups sliced carrots
1/2 cup sliced celery
1/2 cup crimini mushrooms
1/2 cup chopped green pepper
1 1/2 cup chopped onion
1/2 cup corn (canned or fresh)
1/2 cup barley
1/4 cup chopped fresh parsley
2 beef bouillon cubes
3/4 teaspoon dried basil
3 tablespoons ketchup
5 cups water
2 teaspoons salt
1 1/2 teaspoons black pepper

DIRECTIONS:
In crockpot, layer the vegetables and beef.
Add barley and remaining ingredients, except salt and pepper.
Cover and cook on LOW for about 8 hours.
Add salt and pepper to taste.
