Barley Risotto

12 stalks of thin asparagus

2 1/2 cups chicken broth or vegetable broth

1 tablespoon extra-virgin olive oil

3/4 cup chopped scallions

3/4 cup fresh shiitake mushrooms caps, thinly sliced

1 cup barley (the fast-cooking kind)

1/2 cup dry white wine

1/2 cup grated Parmesan cheese

1/2 teaspoon Salt

1/4 teaspoon Pepper

Cut off ends of asparagus stalks.

Cut stalks into pieces about 1 inch long.

Place in boiling water until tender, about 2 minutes. Drain and set aside.

Heat chicken broth to a simmer. Cover and keep warm.

Heat the oil in a skillet over medium heat.

Add scallions and shiitakes and cook, stirring occasionally, about 3 minutes.

Add barley and stir for 1 minute.

Add wine and stir until evaporated, about 1 minute.

Add about 1/2 cup of the hot broth and cook, stirring frequently, until most of the liquid is absorbed by the barley.

Continue cooking, adding the broth 1/2 cup at a time and stirring frequently, until the barley is tender. This takes about 10 minutes.

Remove pan from heat and stir in the cheese and asparagus.

Season with salt and pepper.

Serve hot, warm or cold.
