A beef brisket is a large, somewhat tough cut of beef that is best when slow-roasted at low temperatures.

Beef brisket is often prepared in a crock pot, but the succulent flavor of the following dish is well worth a little extra trouble.

Beef Brisket Recipe



12 ounces of beer

1/2 cup of tomato juice

1 cup of chopped onion

2 large cloves of minced garlic

3 tablespoons of Worcestershire sauce

1/4 cup of ketchup

2 tablespoons of brown sugar

1 tablespoon of lemon juice

1 tablespoon paprika

1 tablespoon of dry mustard

1 teaspoon of Tabasco sauce 

1 teaspoon of salt

1/2 teaspoon of black pepper

4 cups of hickory chips or mesquite

1 beef brisket, weighing about 5 pounds


Soak the wood chips in water for about an hour before cooking time.

In a medium saucepan, combine the beer, tomato juice, onion, garlic, Worcestershire, ketchup, brown sugar, lemon juice, paprika, mustard, hot pepper sauce, 1 teaspoon of salt and 1/2 teaspoon of pepper.

Bring these ingredients to a boil, then reduce the heat and simmer for about half an hour.

In a covered grill, arrange a drip pan between the coals.

When the coals are hot, drain the wood chips and sprinkle them over the coals.

Place the brisket on a grill over the drip pan. Then brush the meat with some of the sauce.

Cover the grill and let the brisket cook for about an hour.

Turn the brisket over, brushing both sides with more sauce.

Add more coals and chips if necessary.

Cover the grill and cook the meat for about one hour longer, or until the meat is well done.

Brush the meat with the sauce frequently during the last 15 to 20 minutes of cooking time.

Heat the remaining sauce on the stove top and serve it with the meat.

Beef Brisket is perfect when served with any kind of potatoes and or fresh green vegetables.
