BEEF STROGANOFF RECIPES
Beef Stroganoff recipes.
Most recipes are easily improvised once you learn the basics. Stroganoff is basically tender sliced beef with mushrooms in a sour cream sauce, usually served over noodles or rice. Here's a relatively simple variation:INGREDIENTS: 1 pound filet mignon (or flank steak if you're on a budget) 2 tablespoons olive oil 4 large, thin-sliced portobello mushrooms (or an equal quantity of your favorite mushrooms) 1 large chopped onion 1/2 teaspoon dried thyme 1/2 teaspoon salt 1/2 teaspoon black pepper
3 tablespoons all-purpose flour About 14 ounces of beef broth 2 tablespoons brandy 1 tablespoon red-wine vinegar 1/2 cup sour cream 2 tablespoons chopped fresh chives 2 tablespoons chopped fresh parsley ************************************* DIRECTIONS: Heat 1 tablespoon oil in a large skillet over high heat. Add steak and cook until browned on both sides, 3 to 4 minutes per side. Transfer meat to a cutting board. Cut meat lengthwise into 2 long pieces, then crosswise, across the grain, into 1/4-inch-thick slices. Heat the remaining 1 tablespoon oil in the skillet over medium heat. Add mushrooms, onion, thyme, salt and pepper. Cook, stirring often, for about 10 minutes. Sprinkle flour over the vegetables and stir until coated. Stir in broth, brandy and vinegar, and bring to a boil, stirring often. Reduce heat to simmer, and continue cooking, stirring often, until the mixture is thickened, about 3 minutes. Stir in sour cream, chives, parsley, steak slices, and any juices from the steak. Bring to a simmer and stir for 2 minutes, or until fully heated. SUGGESTION: Serve over egg noodles. MAKES 4 SERVINGS
