CHEESE FONDUE RECIPES

Cheese Fondue recipes.





Cheese fondue is a recipe that originated in France and Switzerland. It involves a large pot of melted cheese suspended over a small burner, to be shared by all who are dining together. Traditionally, the cheese is eaten by dipping a small piece of bread into the pot on the end of a long fork.

A popular variation on the fondue recipe is Chocolate Fondue. This recipe involves fresh fruits like whole strawberries or sliced bananas, dipped in melted chocolate.

The following recipe appeared in a 1966 issue of Gourmet Magazine:

CHEESE FONDUE

INGREDIENTS:

1 garlic clove, halved crosswise

1 1/2 cups dry white wine

1 tablespoon cornstarch

2 teaspoons kirsch (a colorless cherry brandy)

2 cups Swiss cheese, coarsely grated

2 cups Gruyère cheese, coarsely grated

French bread, cut into cubes

DIRECTIONS:

Rub the inside of a 4-quart heavy pot with garlic, then

discard garlic.

Add wine to pot and bring just to a simmer over moderate heat.

Stir together cornstarch and kirsch in a cup.

Gradually add cheese to the pot and cook, stirring constantly in

a zigzag pattern (not a circular motion) to prevent cheese from

balling up, until cheese is just melted and creamy (do not let it

boil).

Stir cornstarch mixture again, then stir into the melted cheese.

Bring fondue to a simmer and cook, stirring, until thickened, 5 to 8 minutes.

Transfer to fondue pot set over a flame and serve with bread cubes and long forks for dipping.
