Marsala is a popular Italian wine. It was traditionally served as an aperitif or a dessert wine.
Connoisseurs often enjoy Marsala wine chilled and paired with crackers and Parmesan, Gorgonzola, Roquefort or other tangy cheeses.
Marsala wine is also served at room temperature with fresh fruits or pastries.
Rich Italian desserts such as Zabaglione, Tiramisu and Shortcake are also frequently made with Marsala wine.
Chicken Marsala is traditionally an Italian-American food dish that uses Marsala wine in the sauce.
If you don't have Marsala wine, substitute the red wine of your choice in the recipe. Dry and sweet varieties both work well.
Here is one of many popular Easy Chicken Marsala Recipes.
4 boneless, skinless chicken breast halves
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup flour
1/4 cup olive oil, divided
6 cups white and/or crimini mushrooms, sliced
1/2 cup chopped onion
1 cup Marsala or other red wine
1 cup chicken broth
Season chicken breasts with salt and pepper.
Lightly coat both sides of chicken with flour.
In a large skillet, heat half the olive oil over medium-high heat.
Add chicken to oil and cook until golden, about 2 minutes on each side.
Transfer chicken pieces to a platter.
Reduce heat to medium and add remaining oil to skillet.
Add sliced mushrooms and onion.
Cook and stir the vegetables until tender, about 6 minutes.
Stir in chicken broth and wine until heated through.
Return chicken breasts to the pan and simmer, covered, until no pink remains in the chicken, 10 - 12 minutes.
MAKES 4 SERVINGS
Nice when served with pasta.
