EGG SALAD SANDWICH RECIPE




Here's your basic egg salad sandwich recipe - simple and delicious. Excellent whether served with bread, or stuffed inside a fresh tomato, or all by itself, egg salad is a smart choice for a healthy lunch.

HELPFUL HINT: Go easy on the mayo. It tastes better that way. Use a little bit at a time until the egg salad reaches the desired texture.

INGREDIENTS:

4 hard-boiled eggs

1 stalk finely chopped celery

1 Tablespoon of mayonnaise

1 Tablespoon sweet pickle relish

1/4 teaspoon fresh black pepper

1/4 teaspoon salt

DIRECTIONS:

Mash eggs together in a bowl.

Add all the other ingredients and blend together well.

SUGGESTION: Serve with crunchy rolls, lettuce and tomato.

MAKES ABOUT 2 SERVINGS

PESTO EGG SALAD

INGREDIENTS:

6 hard-boiled eggs, finely chopped

1/4 cup fresh minced parsley

1/4 cup fresh minced cilantro

1/2 cup fresh minced basil

1 clove of minced garlic

1 minced shallot

2 minced scallions

1/2 cup light mayonnaise

Sea salt, to taste

pinch of paprika

Iceberg lettuce leaves

DIRECTIONS:

Combine chopped eggs, herbs, garlic, shallot and scallions together in a mixing bowl.

Fold mayonnaise into the eggs and herbs mixture until evenly mixed.

Season to taste with sea salt.

Serve over lettuce, seasoned with paprika.

* To give your egg salad an edgy kick, follow the first recipe shown above, but add one finely chopped anchovy to the mix.
