Pork Tenderloin recipes





The word "tenderloin" refers to the psoas major muscle along the central spine portion of the back of an animal. This is the most tender part of the animal, because these muscles are used for posture, rather than movement.

Here is the recipe for a super easy-to-make, totally tasty pork tenderloin dinner.

PORK TENDERLOIN WITH CRANBERRY GLAZE

INGREDIENTS:

2 pork tenderloins, about 1 pound each

2 large cloves garlic

1/2 teaspoon ground cumin

1/2 teaspoon thyme

1/2 teaspoon ground cinnamon

1/2 teaspoon ground allspice

dash ground cloves

1/4 teaspoon salt

1/8 teaspoon black pepper

About 1 lb. frozen cranberries

1 (12 oz.) can mandarin orange slices in lite syrup

1/2 cup sugar

juice and zest from 1 orange

DIRECTIONS:

Heat oven to 425°. Lightly oil a roasting pan.

Trim excess fat from pork tenderloins.

Mince garlic and blend with cumin, thyme, cinnamon, allspice, and cloves

Add 2 teaspoons of vegetable oil.

Rub spice mixture all over the pork tenderloins.

Roast for about 1 hour.

Meanwhile, in a saucepan, combine the cranberries, mandarin orange slices with syrup, orange juice with zest, and sugar.

Bring glaze to a boil. Reduce heat and simmer for about 8 to 10 minutes, or until mixture is thickened.

Spoon some of the cranberry mixture over the pork tenderloins and roast for 5 minutes longer.

Heat remaining cranberry mixture to serve with slices of pork.

SUGGESTION: Goes well with a side of sweet potatoes and fresh collard greens or beet greens.
